Ingredients

  • 1 1/3 lbs leg of lamb boneless, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • ½ teaspoon cinnamon
  • ½ teaspoon turmeric
  • 1 garlic clove finely minced
  • Juice of ½ lemon
  • Salt and pepper to taste
  • Fresh parsley leaves for garnish
  • Optional vegetables for skewers: Red bell peppers onions, zucchini

Instructions

Step 1: Prepare the Marinade

  • In a large bowl, mix the olive oil, lemon juice, cumin, paprika, cinnamon, turmeric, and minced garlic.
  • Add salt and pepper to taste, then stir well until the marinade is smooth and well combined.

Step 2: Marinate the Lamb

  • Add the lamb cubes to the marinade and toss to coat evenly.
  • Cover the bowl with plastic wrap and let the meat marinate in the refrigerator for at least 1 hour (the longer it marinates, the more flavorful it will be).

Step 3: Assemble the Skewers

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Thread the lamb cubes onto the skewers, alternating with pieces of bell peppers, onions, and zucchini if desired.

Step 4: Grill the Lamb Skewers

  • Preheat your grill or a grill pan over medium-high heat.
  • Place the skewers on the hot grill and cook for about 8 to 10 minutes, turning occasionally for even cooking.
  • Once the skewers are nicely browned and tender, remove them from the grill and let them rest for a few minutes before serving.
