Ingredients
  

  • 1 ¼ cups all-purpose flour 150g
  • ¾ cup shredded coconut 100g
  • ¾ cup granulated sugar 150g
  • 7 tbsp melted butter 100g
  • 3 eggs
  • 2 tsp baking powder
  • Zest and juice of 1 lime
  • cup coconut milk 150ml
  • 1 pinch salt

Instructions
 

Step 1: Prepare the Batter

  • Preheat your oven to 350°F (180°C).
  • In a large bowl, whisk the eggs and sugar until the mixture becomes light and fluffy.
  • Stir in the melted butter and mix well.

Step 2: Combine the Dry Ingredients

  • In another bowl, sift together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently.
  • Mix in the shredded coconut until fully combined.

Step 3: Add Lime and Coconut Milk

  • Zest the lime and squeeze its juice.
  • Stir both the zest and juice into the batter.
  • Slowly add the coconut milk, mixing until the batter is smooth and well combined.

Step 4: Bake the Cake

  • Grease a cake pan and pour in the batter.
  • Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool for 10 minutes before removing it from the pan.
