Instructions
Step 1: Prepare the Batter
Preheat your oven to 350°F (180°C).
In a large bowl, whisk the eggs and sugar until the mixture becomes light and fluffy.
Stir in the melted butter and mix well.
Step 2: Combine the Dry Ingredients
In another bowl, sift together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring gently.
Mix in the shredded coconut until fully combined.
Step 3: Add Lime and Coconut Milk
Zest the lime and squeeze its juice.
Stir both the zest and juice into the batter.
Slowly add the coconut milk, mixing until the batter is smooth and well combined.
Step 4: Bake the Cake
Grease a cake pan and pour in the batter.
Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool for 10 minutes before removing it from the pan.
